
Lallzyme Cuvee Blanc
Cuvee Blanc is for use on white grapes during skin contact prior to pressing.  It is used to enhance aromatic complexity, provide gentle juice extraction, and fast clarification after pressing.
Minimum contact time is four hours, with 6-12 hours best.  Keep must below 55F and add 50ppm of SO2 at crush.  Use 0.1 grams per gallon of must.
